Ingredients

  • sweet corn - 1 cup (fresh or frozen)
  • red bell pepper - 1/2 cup, diced
  • green onion - 2 stalks, sliced
  • cherry tomatoes - 1/2 cup, halved
  • cilantro - 1/4 cup, chopped
  • lime juice - 2 tablespoons
  • olive oil - 1 tablespoon
  • salt - 1/4 teaspoon
  • black pepper - 1/4 teaspoon
  • avocado - 1/2, diced

Steps

  1. If using frozen corn, cook the corn according to package instructions and let it cool. If using fresh corn, boil for 3-5 minutes until tender, then cool.
  2. In a large bowl, combine the cooled corn, diced red bell pepper, sliced green onion, halved cherry tomatoes, and chopped cilantro.
