  • Red bell pepper - 1 medium, diced
  • Red onion - 1/4 cup, finely chopped
  • Cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. If using fresh corn, cook it in boiling water for 3-5 minutes until tender, then drain and cool. If using frozen corn, thaw it and set aside.
