- Brown rice - 1 cup
- Water - 6 cups
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Carrot - 1 medium, diced
- Spinach - 1 cup, chopped
- Green onion - 2 stalks, sliced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the brown rice under cold water until the water runs clear to remove excess starch.
- In a large pot, combine the rinsed brown rice and 6 cups of water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and cover the pot. Simmer for about 30 minutes, stirring occasionally.
- After 30 minutes, add the minced garlic, grated ginger, and diced carrot to the pot. Continue to simmer for another 10-15 minutes until the rice is creamy and the carrots are tender.
- Stir in the chopped spinach, soy sauce, and sesame oil. Cook for an additional 2-3 minutes until the spinach is wilted.
- Season with salt and pepper to taste. Serve hot, garnished with sliced green onions.
