Ingredients

  • Brown rice - 1 cup
  • Water - 6 cups
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Carrot - 1 medium, diced
  • Spinach - 1 cup, chopped
  • Green onion - 2 stalks, sliced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the brown rice under cold water until the water runs clear to remove excess starch.
  2. In a large pot, combine the rinsed brown rice and 6 cups of water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and cover the pot. Simmer for about 30 minutes, stirring occasionally.
  4. After 30 minutes, add the minced garlic, grated ginger, and diced carrot to the pot. Continue to simmer for another 10-15 minutes until the rice is creamy and the carrots are tender.
  5. Stir in the chopped spinach, soy sauce, and sesame oil. Cook for an additional 2-3 minutes until the spinach is wilted.
  6. Season with salt and pepper to taste. Serve hot, garnished with sliced green onions.
