Ingredients

  • bull testicles - 500 grams
  • buttermilk - 1 cup
  • cornmeal - 1 cup
  • gluten-free all-purpose flour - 1/2 cup
  • paprika - 1 teaspoon
  • black pepper - 1 teaspoon
  • salt - 1 teaspoon
  • garlic powder - 1/2 teaspoon
  • onion powder - 1/2 teaspoon
  • cayenne pepper - 1/4 teaspoon
  • vegetable oil - for frying
  • lemon wedges - for serving

Steps

  1. Start by cleaning the bull testicles under cold water, then peel away the outer membrane and slice them into 1/2-inch thick rounds.
  2. Place the sliced testicles in a bowl and cover them with buttermilk. Let them soak for at least 30 minutes to tenderize.
  3. In a separate bowl, combine cornmeal, gluten-free flour, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper to make the breading mixture.
  4. Heat vegetable oil in a deep skillet or frying pan over medium-high heat until it reaches 180°C (350°F).
  5. Remove the testicle slices from the buttermilk, allowing excess to drip off, then dredge each piece in the breading mixture, ensuring they are fully coated.
  6. Carefully place the breaded testicle slices in the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy.
  7. Use a slotted spoon to remove the fried Rocky Mountain Oysters from the oil and drain them on paper towels.
  8. Serve immediately with lemon wedges on the side for added flavor.
