  • Jasmine rice - 1 cup
  • Coconut milk - 1 cup
  • Black beans (canned, rinsed and drained) - 1 cup
  • Vegetable broth - 1/2 cup
  • Garlic (minced) - 2 cloves
  • Onion (chopped) - 1 small
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro (chopped, for garnish) - 2 tablespoons
  • Lime (cut into wedges, for serving) - 1

Steps

  1. In a medium saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the jasmine rice to the saucepan, stirring to coat the rice with the oil, and cook for an additional 1-2 minutes.
  3. Pour in the coconut milk, vegetable broth, salt, and black pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  5. After 15 minutes, remove from heat and stir in the black beans. Cover again and let it sit for another 5 minutes to heat the beans through.
  6. Fluff the rice and beans with a fork, then serve garnished with chopped cilantro and lime wedges on the side.
