- Coconut milk - 1 cup
- Black beans (canned, rinsed and drained) - 1 cup
- Vegetable broth - 1/2 cup
- Garlic (minced) - 2 cloves
- Onion (chopped) - 1 small
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cilantro (chopped, for garnish) - 2 tablespoons
- Lime (cut into wedges, for serving) - 1
Steps
- In a medium saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the jasmine rice to the saucepan, stirring to coat the rice with the oil, and cook for an additional 1-2 minutes.
- Pour in the coconut milk, vegetable broth, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
- After 15 minutes, remove from heat and stir in the black beans. Cover again and let it sit for another 5 minutes to heat the beans through.
- Fluff the rice and beans with a fork, then serve garnished with chopped cilantro and lime wedges on the side.
