Ingredients

  • Sugar - 1 teaspoon
  • Coconut flakes (unsweetened) - 2 tablespoons
  • Green onions (chopped) - 2 tablespoons
  • Lime juice - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and sugar.
  3. Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and let it simmer for 15-18 minutes or until the rice is cooked and the liquid is absorbed.
  4. Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
  5. Fluff the rice with a fork, then stir in the coconut flakes, chopped green onions, and lime juice.
