  • shredded coconut - 150 grams
  • almond flour - 50 grams
  • maple syrup - 60 ml
  • vanilla extract - 1 teaspoon
  • salt - a pinch
  • coconut oil - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the shredded coconut, almond flour, maple syrup, vanilla extract, and a pinch of salt. Mix until well combined.
  3. Melt the coconut oil and add it to the mixture, stirring until everything is evenly coated.
  4. Using your hands, form small mounds of the mixture (about 2 tablespoons each) and place them on the prepared baking sheet, leaving some space between each mound.
  5. Bake in the preheated oven for 15-20 minutes or until the edges turn golden brown.
  6. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
