- Jasmine rice - 150 grams
- Coconut milk - 200 milliliters
- Lime - 1, zested and juiced
- Vegetable broth - 100 milliliters
- Fresh cilantro - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut flakes - 2 tablespoons, toasted (optional)
Steps
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, coconut milk, vegetable broth, lime juice, salt, and black pepper.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the saucepan.
- Simmer for 15-20 minutes or until the rice is cooked and the liquid has been absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork and stir in the lime zest and chopped cilantro.
- If desired, top with toasted coconut flakes before serving.
