Ingredients

  • Jasmine rice - 150 grams
  • Coconut milk - 200 milliliters
  • Lime - 1, zested and juiced
  • Vegetable broth - 100 milliliters
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut flakes - 2 tablespoons, toasted (optional)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, vegetable broth, lime juice, salt, and black pepper.
  3. Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the saucepan.
  4. Simmer for 15-20 minutes or until the rice is cooked and the liquid has been absorbed.
  5. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  6. Fluff the rice with a fork and stir in the lime zest and chopped cilantro.
  7. If desired, top with toasted coconut flakes before serving.
