Ingredients

  • Chicken breast - 300 grams
  • Coconut milk - 200 ml
  • Lime juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Honey - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cooked quinoa - 1 cup (for serving)

Steps

  1. In a bowl, combine coconut milk, lime juice, minced garlic, chopped cilantro, honey, salt, and black pepper to create the marinade.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
  3. Heat olive oil in a skillet over medium heat. Remove chicken from the marinade (reserve the marinade) and cook chicken for about 6-7 minutes on each side, or until fully cooked and golden brown.
  4. Pour the reserved marinade into the skillet and bring to a simmer. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  5. Serve the chicken over cooked quinoa, drizzling the coconut lime sauce on top.
