Ingredients

  • Cream cheese - 150 grams
  • Granulated sugar - 50 grams
  • Coconut cream - 100 ml
  • Lime juice - 30 ml
  • Lime zest - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Egg - 1 large
  • Graham cracker crumbs - 60 grams
  • Unsalted butter - 30 grams, melted
  • Coconut flakes - 30 grams (for topping)

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a small springform pan to form a crust.
  3. In another bowl, beat the cream cheese and sugar together until smooth and creamy.
  4. Add the coconut cream, lime juice, lime zest, and vanilla extract to the cream cheese mixture, and mix until well combined.
  5. Add the egg to the mixture and blend until smooth and fully incorporated.
  6. Pour the cheesecake filling over the prepared crust in the springform pan.
  7. Bake in the preheated oven for 30-35 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven for another 10 minutes with the door slightly ajar.
  9. Remove from the oven and allow to cool to room temperature, then refrigerate for at least 2 hours to set.
  10. Before serving, top with coconut flakes for garnish.
