- Cream cheese - 150 grams
- Granulated sugar - 50 grams
- Coconut cream - 100 ml
- Lime juice - 30 ml
- Lime zest - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Egg - 1 large
- Graham cracker crumbs - 60 grams
- Unsalted butter - 30 grams, melted
- Coconut flakes - 30 grams (for topping)
Steps
- Preheat the oven to 160°C (320°F).
- In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a small springform pan to form a crust.
- In another bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the coconut cream, lime juice, lime zest, and vanilla extract to the cream cheese mixture, and mix until well combined.
- Add the egg to the mixture and blend until smooth and fully incorporated.
- Pour the cheesecake filling over the prepared crust in the springform pan.
- Bake in the preheated oven for 30-35 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven for another 10 minutes with the door slightly ajar.
- Remove from the oven and allow to cool to room temperature, then refrigerate for at least 2 hours to set.
- Before serving, top with coconut flakes for garnish.
