  • Vegetable broth - 500 ml
  • Carrot - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Curry powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Spinach - 50 grams, fresh
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1, juiced

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the pot, stirring for another minute until fragrant.
  4. Stir in the diced carrot, curry powder, and cumin, cooking for an additional 2-3 minutes.
  5. Pour in the vegetable broth and add the rinsed lentils. Bring to a boil, then reduce the heat to low and let simmer for 20 minutes.
  6. Stir in the coconut milk and fresh spinach, cooking for another 5 minutes until the spinach is wilted.
