- Curry powder - 1 tablespoon
- Cumin - 1 teaspoon
- Olive oil - 1 tablespoon
- Spinach - 50 grams, fresh
- Salt - to taste
- Black pepper - to taste
- Lime - 1, juiced
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the pot, stirring for another minute until fragrant.
- Stir in the diced carrot, curry powder, and cumin, cooking for an additional 2-3 minutes.
- Pour in the vegetable broth and add the rinsed lentils. Bring to a boil, then reduce the heat to low and let simmer for 20 minutes.
- Stir in the coconut milk and fresh spinach, cooking for another 5 minutes until the spinach is wilted.
