  • Protein powder (vanilla) - 30 grams
  • Coconut oil (melted) - 20 grams
  • Honey or maple syrup - 15 grams
  • Egg - 1 large
  • Baking soda - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Salt - a pinch
  • Dark chocolate chips - 20 grams (optional)

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine coconut flour, almond flour, protein powder, baking soda, and salt.
  3. In another bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. If using, fold in the dark chocolate chips to the dough.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 5 cm apart.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
