- Honey or maple syrup - 15 grams
- Egg - 1 large
- Baking soda - 1/4 teaspoon
- Vanilla extract - 1/2 teaspoon
- Salt - a pinch
- Dark chocolate chips - 20 grams (optional)
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine coconut flour, almond flour, protein powder, baking soda, and salt.
- In another bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- If using, fold in the dark chocolate chips to the dough.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 5 cm apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
