- Coconut milk - 200 ml
- Sweetened condensed milk - 100 g
- Eggs - 2 large
- Vanilla extract - 1 teaspoon
- Sugar - 50 g (for caramel)
- Water - 1 tablespoon (for caramel)
- Coconut flakes - 2 tablespoons (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- In a small saucepan, combine 50 g of sugar and 1 tablespoon of water over medium heat, stirring until the sugar dissolves. Allow it to boil until it turns a golden caramel color, about 5-7 minutes.
- Quickly pour the caramel into two ramekins, swirling to coat the bottom evenly before it hardens.
- In a mixing bowl, whisk together 200 ml of coconut milk, 100 g of sweetened condensed milk, 2 large eggs, and 1 teaspoon of vanilla extract until well combined.
- Pour the coconut mixture over the set caramel in the ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for about 40-45 minutes, or until the flan is set and a knife inserted in the center comes out clean.
- Remove the ramekins from the water bath and let them cool to room temperature, then refrigerate for at least 2 hours.
- To serve, run a knife around the edges of the flan to loosen it, then invert onto a plate. Garnish with coconut flakes.
