- Cumin - 1 teaspoon

- Spinach - 2 cups, fresh

- Lime - 1, juiced
- Fresh cilantro - for garnish
Steps
- Rinse the red lentils under cold water and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, grated ginger, curry powder, turmeric, and cumin, and cook for another minute until fragrant.
- Add the rinsed lentils, vegetable broth, and coconut milk to the saucepan. Bring to a boil, then reduce the heat to low and let it simmer for about 20 minutes, or until the lentils are tender.
- Add the fresh spinach to the lentil mixture and cook for an additional 5 minutes until wilted. Season with salt and black pepper to taste.
