- Whole grain burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Coconut oil - 1 tablespoon
Steps
- In a mixing bowl, combine ground chicken, coconut milk, curry powder, minced garlic, grated ginger, chopped green onion, cilantro, salt, and black pepper. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat coconut oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until fully cooked and golden brown.
- While the burgers are cooking, toast the whole grain burger buns in a separate skillet or toaster until golden.
