  • Green onion - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced
  • Coconut oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine ground chicken, coconut milk, curry powder, minced garlic, grated ginger, chopped green onion, cilantro, salt, and black pepper. Mix until well combined.
  2. Form the mixture into two equal-sized patties.
  3. Heat coconut oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until fully cooked and golden brown.
  4. While the burgers are cooking, toast the whole grain burger buns in a separate skillet or toaster until golden.
