Ingredients
- Cauliflower - 1 medium head, cut into florets
- Coconut milk - 200 ml
- Curry powder - 2 tablespoons
- Barbecue sauce - 100 ml (dairy-free)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Lime juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - for garnish
Steps
- Preheat the grill to medium heat (about 180°C / 350°F).
- In a large bowl, combine the coconut milk, curry powder, garlic, ginger, lime juice, olive oil, salt, and black pepper to create a marinade.
- Add the cauliflower florets to the marinade, ensuring they are well coated. Let them sit for about 10 minutes to absorb the flavors.
- Thread the marinated cauliflower onto skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning).
- Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally, until the cauliflower is tender and slightly charred.
- During the last few minutes of grilling, brush the cauliflower with the barbecue sauce.
- Once cooked, remove the skewers from the grill and garnish with fresh cilantro before serving.
