  • Coconut oil - 1 tablespoon (15ml)
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Curry powder - 1 tablespoon
  • Turmeric - 1 teaspoon
  • Vegetable broth - 1/2 cup (120ml)
  • Spinach - 2 cups, fresh
  • Bell pepper - 1 medium, diced
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. In a medium pot, heat coconut oil over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
