- almond flour - 50 grams
- maple syrup - 50 ml
- vanilla extract - 1 teaspoon
- egg whites - 2 large
- salt - a pinch
- almond extract - 1/2 teaspoon
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, combine the shredded coconut, almond flour, maple syrup, vanilla extract, almond extract, and a pinch of salt. Mix well until fully combined.
- In a separate bowl, whisk the egg whites until soft peaks form.
- Gently fold the whipped egg whites into the coconut mixture until just combined. Be careful not to deflate the egg whites.
- Using a spoon or cookie scoop, drop small mounds of the mixture onto the prepared baking sheet, spacing them about 5 cm apart.
