Ingredients

  • unsweetened shredded coconut - 150 grams
  • almond flour - 50 grams
  • maple syrup - 50 ml
  • vanilla extract - 1 teaspoon
  • egg whites - 2 large
  • salt - a pinch
  • almond extract - 1/2 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the shredded coconut, almond flour, maple syrup, vanilla extract, almond extract, and a pinch of salt. Mix well until fully combined.
  3. In a separate bowl, whisk the egg whites until soft peaks form.
  4. Gently fold the whipped egg whites into the coconut mixture until just combined. Be careful not to deflate the egg whites.
  5. Using a spoon or cookie scoop, drop small mounds of the mixture onto the prepared baking sheet, spacing them about 5 cm apart.
  6. Bake in the preheated oven for 15-20 minutes, or until the macaroons are golden brown on the edges.
  7. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
