Ingredients

  • Potatoes - 300 grams
  • Mayonnaise - 3 tablespoons
  • Greek yogurt - 2 tablespoons
  • Dijon mustard - 1 teaspoon
  • Apple cider vinegar - 1 teaspoon
  • Celery - 50 grams, finely chopped
  • Red onion - 30 grams, finely chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Wash the potatoes thoroughly and cut them into uniform cubes.
  2. In a large pot, bring salted water to a boil and add the potato cubes. Cook for about 15 minutes, or until tender but firm.
  3. Drain the potatoes and let them cool for about 10 minutes.
  4. In a mixing bowl, combine mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix well until smooth.
