- Potatoes - 300 grams
- Mayonnaise - 3 tablespoons
- Greek yogurt - 2 tablespoons
- Dijon mustard - 1 teaspoon
- Apple cider vinegar - 1 teaspoon
- Celery - 50 grams, finely chopped
- Red onion - 30 grams, finely chopped
- Fresh parsley - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Wash the potatoes thoroughly and cut them into uniform cubes.
- In a large pot, bring salted water to a boil and add the potato cubes. Cook for about 15 minutes, or until tender but firm.
- Drain the potatoes and let them cool for about 10 minutes.
- In a mixing bowl, combine mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix well until smooth.
- Add the cooled potatoes, chopped celery, red onion, and parsley to the bowl. Gently fold the ingredients together until the potatoes are well coated with the dressing.
