Ingredients

  • yellow cornmeal - 120 grams
  • all-purpose flour - 30 grams
  • baking powder - 1 teaspoon
  • salt - 1/2 teaspoon
  • sugar - 1 teaspoon
  • black pepper - 1/4 teaspoon
  • onion - 1/2 medium, finely chopped
  • buttermilk - 120 ml
  • egg - 1 large, lightly beaten
  • vegetable oil - for frying

Steps

  1. In a medium bowl, combine the cornmeal, flour, baking powder, salt, sugar, and black pepper.
  2. Add the finely chopped onion to the dry ingredients and mix well.
  3. In another bowl, whisk together the buttermilk and the lightly beaten egg.
  4. Pour the wet ingredients into the dry mixture and stir until just combined; do not overmix.
  5. Heat vegetable oil in a deep skillet or pot over medium heat until it reaches 180°C (350°F).
  6. Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan.
  7. Fry the hush puppies for about 3-4 minutes or until they are golden brown, turning them occasionally to ensure even cooking.
  8. Remove the hush puppies with a slotted spoon and drain on paper towels.
  9. Serve warm with your choice of dipping sauce.
