- yellow cornmeal - 120 grams
- all-purpose flour - 30 grams
- baking powder - 1 teaspoon
- salt - 1/2 teaspoon
- sugar - 1 teaspoon
- black pepper - 1/4 teaspoon
- onion - 1/2 medium, finely chopped
- buttermilk - 120 ml
- egg - 1 large, lightly beaten
- vegetable oil - for frying
Steps
- In a medium bowl, combine the cornmeal, flour, baking powder, salt, sugar, and black pepper.
- Add the finely chopped onion to the dry ingredients and mix well.
- In another bowl, whisk together the buttermilk and the lightly beaten egg.
- Pour the wet ingredients into the dry mixture and stir until just combined; do not overmix.
- Heat vegetable oil in a deep skillet or pot over medium heat until it reaches 180°C (350°F).
- Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan.
- Fry the hush puppies for about 3-4 minutes or until they are golden brown, turning them occasionally to ensure even cooking.
- Remove the hush puppies with a slotted spoon and drain on paper towels.
- Serve warm with your choice of dipping sauce.
