Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cream cheese - 50 grams, softened
  • Clams (canned or fresh) - 200 grams, drained
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Rinse the cauliflower and cut it into florets. Steam the florets until tender, about 10 minutes, then drain well.
  3. In a food processor, blend the steamed cauliflower until it resembles rice. Allow it to cool slightly.
  4. In a mixing bowl, combine the cauliflower rice, shredded mozzarella, grated Parmesan, egg, garlic powder, salt, and black pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 20 minutes or until golden brown.
  7. While the crust is baking, mix the softened cream cheese, drained clams, chopped parsley, olive oil, lemon juice, and red pepper flakes in a bowl until well combined.
  8. Once the crust is ready, remove it from the oven and spread the clam mixture evenly over the top.
  9. Return the clam pie to the oven and bake for an additional 10-15 minutes, until heated through and slightly golden on top.
  10. Remove from the oven, let cool for a few minutes, then slice and serve warm.
