  • Fresh clams (cleaned) - 500 grams

  • Dry white wine - 100 ml
  • Fresh parsley (chopped) - 2 tablespoons
  • Red chili flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon (juiced) - 1 medium

Steps

  1. Cook the linguine according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, around 2-3 minutes.
  3. Add the fresh clams to the skillet, followed by the white wine and red chili flakes. Cover the skillet and cook for about 5-7 minutes, or until the clams have opened.
  4. Remove the lid and add the cooked linguine to the skillet, tossing everything together. If the mixture seems dry, add some reserved pasta water until desired consistency is reached.
  5. Stir in the lemon juice and chopped parsley, seasoning with salt and black pepper to taste. Cook for an additional 1-2 minutes to combine the flavors.
  6. Serve immediately, garnished with extra parsley if desired.
