Ingredients
- Linguine - 200 grams
- Fresh clams (cleaned) - 500 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 3 cloves
- Shallot (finely chopped) - 1 medium
- Dry white wine - 100 ml
- Fresh parsley (chopped) - 2 tablespoons
- Red chili flakes - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon (juiced) - 1 medium
Steps
- Cook the linguine according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, around 2-3 minutes.
- Add the fresh clams to the skillet, followed by the white wine and red chili flakes. Cover the skillet and cook for about 5-7 minutes, or until the clams have opened.
- Remove the lid and add the cooked linguine to the skillet, tossing everything together. If the mixture seems dry, add some reserved pasta water until desired consistency is reached.
- Stir in the lemon juice and chopped parsley, seasoning with salt and black pepper to taste. Cook for an additional 1-2 minutes to combine the flavors.
- Serve immediately, garnished with extra parsley if desired.
