- Fresh clams - 200 grams
- Potato, diced - 100 grams
- Celery, finely chopped - 50 grams
- Onion, finely chopped - 50 grams
- Garlic, minced - 1 clove
- Butter - 15 grams
- Gluten-free chicken broth - 250 ml
- Heavy cream - 100 ml
- Thyme, fresh - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Salt - to taste
- Chives, chopped - for garnish
Steps
- In a medium pot, melt the butter over medium heat. Add the onion, celery, and garlic, and sauté until softened, about 5 minutes.
- Add the diced potato and gluten-free chicken broth to the pot. Bring to a simmer and cook for about 10 minutes, or until the potatoes are tender.
- Meanwhile, rinse the clams under cold water. Add the clams to the pot, cover, and cook until the clams open, about 5-7 minutes.
- Once the clams have opened, discard any that remain closed. Stir in the heavy cream, thyme, black pepper, and salt to taste. Let the chowder simmer for another 5 minutes.
- Remove the pot from heat and ladle the chowder into shot glasses. Garnish with chopped chives and serve immediately.
