- Flour tortillas - 2 large (about 25 cm in diameter)
- Coconut oil - 2 tablespoons, melted
- Granulated sugar - 4 tablespoons
- Ground cinnamon - 2 teaspoons
- Salt - 1/4 teaspoon
Steps
- Preheat a skillet over medium heat.
- In a small bowl, mix the granulated sugar, ground cinnamon, and salt together.
- Brush one side of a flour tortilla with melted coconut oil.
- Place the oil-brushed side down onto the skillet and cook for about 1 minute until lightly golden.
- While the first side is cooking, brush the top side with coconut oil.
- Flip the tortilla and immediately sprinkle half of the cinnamon sugar mixture on the cooked side.
- Cook for an additional 1 minute until the second side is golden and the sugar has begun to caramelize.
- Remove from the skillet and repeat the process with the second tortilla.
- Once both tortillas are cooked, cut them into wedges and serve warm.
