Ingredients

  • Flour tortillas - 2 large (about 25 cm in diameter)
  • Coconut oil - 2 tablespoons, melted
  • Granulated sugar - 4 tablespoons
  • Ground cinnamon - 2 teaspoons
  • Salt - 1/4 teaspoon

Steps

  1. Preheat a skillet over medium heat.
  2. In a small bowl, mix the granulated sugar, ground cinnamon, and salt together.
  3. Brush one side of a flour tortilla with melted coconut oil.
  4. Place the oil-brushed side down onto the skillet and cook for about 1 minute until lightly golden.
  5. While the first side is cooking, brush the top side with coconut oil.
  6. Flip the tortilla and immediately sprinkle half of the cinnamon sugar mixture on the cooked side.
  7. Cook for an additional 1 minute until the second side is golden and the sugar has begun to caramelize.
  8. Remove from the skillet and repeat the process with the second tortilla.
  9. Once both tortillas are cooked, cut them into wedges and serve warm.
