- All-purpose flour - 250 grams
- Active dry yeast - 7 grams
- Warm water - 150 ml
- Granulated sugar - 25 grams
- Salt - 5 grams
- Butter (melted) - 30 grams
- Baking soda - 15 grams
- Cinnamon - 10 grams
- Brown sugar - 50 grams
- Coarse sea salt (for sprinkling) - to taste
Steps
- In a small bowl, combine warm water, yeast, and granulated sugar. Let it sit for about 5 minutes until frothy.
- In a large bowl, mix the flour and salt. Make a well in the center and pour in the yeast mixture and melted butter.
- Knead the dough for about 8-10 minutes until smooth and elastic. Cover the bowl with a damp cloth and let it rise in a warm place for 20 minutes.
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large pot, bring 1 liter of water to a boil and add the baking soda.
- Divide the risen dough into 4 equal pieces and roll each piece into a rope about 30 cm long. Shape each rope into a pretzel.
- Carefully place each pretzel in the boiling water for about 30 seconds, then remove and place on the prepared baking sheet.
- In a small bowl, mix cinnamon and brown sugar. Brush each pretzel with melted butter and sprinkle with the cinnamon-sugar mixture and coarse sea salt.
- Bake in the preheated oven for 12-15 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
