- brown sugar - 1/4 cup (50g)
- granulated sugar - 2 tablespoons
- unsweetened applesauce - 1/4 cup (60ml)
- almond milk - 1/4 cup (60ml)
- vanilla extract - 1 teaspoon
- fresh peaches - 1 medium, diced
- cinnamon sugar (for topping) - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the brown sugar, granulated sugar, applesauce, almond milk, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
