Ingredients

  • 2 medium ripe peaches - sliced
  • 2 tablespoons coconut sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup rolled oats
  • 2 tablespoons almond flour
  • 2 tablespoons coconut oil - melted
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon salt

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine sliced peaches, 1 tablespoon of coconut sugar, lemon juice, and 1/4 teaspoon of cinnamon. Toss well and set aside.
  3. In another bowl, mix together rolled oats, almond flour, remaining coconut sugar, remaining cinnamon, melted coconut oil, maple syrup, vanilla extract, and salt until crumbly.
  4. In a small baking dish, layer the peach mixture evenly at the bottom.
