- All-purpose flour - 1 1/2 cups (180g)
- Baking powder - 1 tsp
- Baking soda - 1/2 tsp
- Salt - 1/4 tsp
- Coconut sugar - 1/4 cup (50g)
- Ground cinnamon - 1 tbsp
- Coconut oil (melted) - 3 tbsp
- Maple syrup - 2 tbsp
- Unsweetened almond milk - 1/2 cup (120ml)
- Vanilla extract - 1 tsp
Steps
- Preheat your oven to 180°C (350°F) and grease a small baking dish.
- In a mixing bowl, combine the flour, baking powder, baking soda, and salt. Mix well.
- In another bowl, whisk together the melted coconut oil, maple syrup, almond milk, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
- Turn the dough onto a floured surface and knead gently for about 1 minute until smooth.
- Roll the dough into a rectangle approximately 1/4 inch thick.
- In a small bowl, mix together the coconut sugar and ground cinnamon. Spread the melted coconut oil over the dough, then sprinkle the cinnamon-sugar mixture evenly on top.
- Starting from one edge, roll the dough tightly into a log. Cut into 4 equal pieces.
- Place the rolls in the greased baking dish and bake for 20-25 minutes until golden.
- While the rolls are baking, prepare a simple glaze by mixing powdered sugar with a little almond milk until smooth. Adjust the consistency as desired.
- Once baked, drizzle the glaze over the warm cinnamon rolls and enjoy!
