Ingredients

  • All-purpose flour - 1 1/2 cups (180g)
  • Baking powder - 1 tsp
  • Baking soda - 1/2 tsp
  • Salt - 1/4 tsp
  • Coconut sugar - 1/4 cup (50g)
  • Ground cinnamon - 1 tbsp
  • Coconut oil (melted) - 3 tbsp
  • Maple syrup - 2 tbsp
  • Unsweetened almond milk - 1/2 cup (120ml)
  • Vanilla extract - 1 tsp

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small baking dish.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, and salt. Mix well.
  3. In another bowl, whisk together the melted coconut oil, maple syrup, almond milk, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
  5. Turn the dough onto a floured surface and knead gently for about 1 minute until smooth.
  6. Roll the dough into a rectangle approximately 1/4 inch thick.
  7. In a small bowl, mix together the coconut sugar and ground cinnamon. Spread the melted coconut oil over the dough, then sprinkle the cinnamon-sugar mixture evenly on top.
  8. Starting from one edge, roll the dough tightly into a log. Cut into 4 equal pieces.
  9. Place the rolls in the greased baking dish and bake for 20-25 minutes until golden.
  10. While the rolls are baking, prepare a simple glaze by mixing powdered sugar with a little almond milk until smooth. Adjust the consistency as desired.
