- baking powder - 1 tsp
- baking soda - 1/2 tsp
- salt - 1/4 tsp
- cinnamon - 1 tsp
- maple syrup - 1/4 cup (60ml)
- almond milk - 3/4 cup (180ml)
- vegetable oil - 2 tbsp (30ml)
- vanilla extract - 1 tsp
- brown sugar - 2 tbsp (30g)
- cinnamon (for filling) - 1 tsp
- powdered sugar - 1/2 cup (60g)
- water (for glaze) - 1-2 tbsp (15-30ml)
Steps
- Preheat the oven to 180°C (350°F) and grease a muffin tin.
- In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the maple syrup, almond milk, vegetable oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
- In a small bowl, mix the brown sugar and cinnamon for the filling.
- Spoon a small amount of pancake batter into each muffin cup, then sprinkle a layer of the cinnamon-sugar mixture on top, followed by another layer of batter to cover.
- Repeat until all batter and filling are used, filling each cup about 2/3 full.
- Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, prepare the glaze by mixing the powdered sugar with enough water to achieve a drizzle consistency.
- Once the muffins are done, let them cool for a few minutes before drizzling with the glaze.
