Ingredients

  • all-purpose flour - 1 cup (120g)
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • salt - 1/4 tsp
  • cinnamon - 1 tsp
  • maple syrup - 1/4 cup (60ml)
  • almond milk - 3/4 cup (180ml)
  • vegetable oil - 2 tbsp (30ml)
  • vanilla extract - 1 tsp
  • brown sugar - 2 tbsp (30g)
  • cinnamon (for filling) - 1 tsp
  • powdered sugar - 1/2 cup (60g)
  • water (for glaze) - 1-2 tbsp (15-30ml)

Steps

  1. Preheat the oven to 180°C (350°F) and grease a muffin tin.
  2. In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the maple syrup, almond milk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  5. In a small bowl, mix the brown sugar and cinnamon for the filling.
  6. Spoon a small amount of pancake batter into each muffin cup, then sprinkle a layer of the cinnamon-sugar mixture on top, followed by another layer of batter to cover.
  7. Repeat until all batter and filling are used, filling each cup about 2/3 full.
  8. Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  9. While the muffins are baking, prepare the glaze by mixing the powdered sugar with enough water to achieve a drizzle consistency.
  10. Once the muffins are done, let them cool for a few minutes before drizzling with the glaze.
