Ingredients

  • all-purpose flour - 150 grams
  • brown sugar - 50 grams
  • baking powder - 1 teaspoon
  • cinnamon - 1 teaspoon
  • salt - 1/4 teaspoon
  • coconut oil, melted - 30 grams
  • maple syrup - 30 ml
  • unsweetened almond milk - 100 ml
  • vanilla extract - 1 teaspoon
  • for the filling: brown sugar - 25 grams
  • cinnamon - 1/2 teaspoon
  • for the glaze: powdered sugar - 50 grams
  • water - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, brown sugar, baking powder, cinnamon, and salt until well combined.
  3. In another bowl, whisk together the melted coconut oil, maple syrup, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a small bowl, mix together the filling ingredients: brown sugar and cinnamon.
  6. Spoon half of the muffin batter into the prepared muffin tin, then sprinkle the cinnamon filling evenly over the top.
  7. Top with the remaining muffin batter, ensuring the filling is covered.
  8. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
