  • baking powder - 1 teaspoon

  • cinnamon - 1 teaspoon
  • unsweetened applesauce - 1/4 cup (60ml)
  • coconut oil - 2 tablespoons (30ml), melted
  • vanilla extract - 1 teaspoon
  • almond milk - 1/2 cup (120ml)
  • brown sugar - 1/4 cup (50g)
  • cinnamon - 1 teaspoon (for filling)
  • powdered sugar - 1/2 cup (60g) (for glaze)
  • almond milk - 1 tablespoon (15ml) (for glaze)

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small baking dish (approximately 8x8 inches).
  2. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and 1 teaspoon of cinnamon.
  3. In another bowl, combine the applesauce, melted coconut oil, vanilla extract, and almond milk.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  5. Pour half of the batter into the prepared baking dish, spreading it evenly.
  6. In a small bowl, mix the brown sugar and 1 teaspoon of cinnamon for the filling, then sprinkle it evenly over the batter in the dish.
  7. Pour the remaining batter over the filling and gently spread it out to cover.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool for 10 minutes, then prepare the glaze by whisking together the powdered sugar and almond milk until smooth.
