Ingredients

  • Almond flour - 1 cup
  • Coconut flour - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Cinnamon - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Egg - 1 large
  • Maple syrup - 3 tablespoons
  • Vanilla extract - 1 teaspoon
  • Milk (dairy or non-dairy) - 1/4 cup
  • Brown sugar - 2 tablespoons
  • Butter (melted) - 2 tablespoons
  • Powdered sugar - 1/4 cup
  • Cream cheese (softened) - 2 tablespoons

Steps

  1. Preheat the oven to 175°C (350°F) and grease a small baking dish (about 20cm x 20cm).
  2. In a mixing bowl, combine the almond flour, coconut flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the egg, maple syrup, vanilla extract, and milk until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until a smooth batter forms.
  5. In a small bowl, mix the brown sugar and melted butter together until combined.
  6. Pour half of the batter into the prepared baking dish, spreading it evenly.
  7. Drizzle the brown sugar and butter mixture over the batter, then pour the remaining batter on top and spread it evenly.
  8. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  9. While the cake is baking, prepare the glaze by mixing the powdered sugar and softened cream cheese. Add a splash of milk if needed to achieve a drizzle-able consistency.
  10. Once the cake is done, allow it to cool slightly before drizzling the glaze on top. Serve warm.
