Ingredients

  • all-purpose flour - 250 grams
  • active dry yeast - 5 grams
  • granulated sugar - 30 grams
  • salt - 2 grams
  • warm water - 150 ml
  • coconut oil (melted) - 30 grams
  • cinnamon - 10 grams
  • brown sugar - 50 grams
  • powdered sugar - 50 grams
  • vanilla extract - 5 ml
  • non-dairy milk (almond, soy, etc.) - 30 ml

Steps

  1. In a small bowl, combine warm water, active dry yeast, and 10 grams of granulated sugar. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour, remaining granulated sugar, and salt. Mix well.
  3. Add the frothy yeast mixture and melted coconut oil to the flour mixture. Stir until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with a towel, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  6. Once risen, roll the dough out into a rectangle (about 1 cm thick).
  7. In a small bowl, mix the brown sugar and cinnamon together. Spread this mixture evenly over the rolled-out dough.
  8. Roll the dough tightly into a log, then cut into 6 equal pieces.
  9. Place the cinnamon roll pieces in a greased baking dish, cover, and let them rise for another 10-15 minutes.
  10. Preheat the oven to 180°C (350°F).
  11. Bake the cinnamon rolls for 20-25 minutes, or until golden brown.
  12. While they are baking, whisk together the powdered sugar, non-dairy milk, and vanilla extract to create the glaze.
  13. Once the rolls are out of the oven, let them cool for a few minutes before drizzling with the glaze.
