- all-purpose flour - 250 grams
- active dry yeast - 5 grams
- granulated sugar - 30 grams
- salt - 2 grams
- warm water - 150 ml
- coconut oil (melted) - 30 grams
- cinnamon - 10 grams
- brown sugar - 50 grams
- powdered sugar - 50 grams
- vanilla extract - 5 ml
- non-dairy milk (almond, soy, etc.) - 30 ml
Steps
- In a small bowl, combine warm water, active dry yeast, and 10 grams of granulated sugar. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour, remaining granulated sugar, and salt. Mix well.
- Add the frothy yeast mixture and melted coconut oil to the flour mixture. Stir until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a towel, and let it rise in a warm place for about 30 minutes, or until doubled in size.
- Once risen, roll the dough out into a rectangle (about 1 cm thick).
- In a small bowl, mix the brown sugar and cinnamon together. Spread this mixture evenly over the rolled-out dough.
- Roll the dough tightly into a log, then cut into 6 equal pieces.
- Place the cinnamon roll pieces in a greased baking dish, cover, and let them rise for another 10-15 minutes.
- Preheat the oven to 180°C (350°F).
- Bake the cinnamon rolls for 20-25 minutes, or until golden brown.
- While they are baking, whisk together the powdered sugar, non-dairy milk, and vanilla extract to create the glaze.
