Ingredients

  • all-purpose flour - 2 cups (250 g)
  • active dry yeast - 1 teaspoon (3 g)
  • granulated sugar - 1 tablespoon (12 g)
  • warm water - 3/4 cup (180 ml)
  • salt - 1 teaspoon (6 g)
  • cinnamon - 1 teaspoon (2 g)
  • raisin - 1/2 cup (75 g)
  • honey - 1 tablespoon (21 g)
  • egg - 1 (for egg wash)

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water with the sugar and let it sit for about 5-10 minutes until foamy.
  2. In a large mixing bowl, combine the all-purpose flour, salt, and cinnamon.
  3. Pour the yeast mixture into the flour mixture and add the honey. Mix until a dough begins to form.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Incorporate the raisins into the dough, kneading gently to distribute evenly.
  6. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  7. Preheat the oven to 220°C (425°F). Bring a large pot of water to a boil and add a tablespoon of honey.
  8. Divide the dough into 4 equal pieces and shape each piece into a bagel, making a hole in the center with your thumb.
  9. Boil each bagel for about 1-2 minutes on each side, then remove and place on a baking sheet lined with parchment paper.
  10. Beat the egg and brush it over each bagel for a shiny finish.
  11. Bake in the preheated oven for 20-25 minutes or until golden brown.
