Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Cinnamon - 1 tsp
  • Maple syrup - 2 tbsp
  • Vanilla extract - 1 tsp
  • Salt - 1/4 tsp
  • Almonds (chopped) - 1/4 cup
  • Fresh berries (strawberries, blueberries, or raspberries) - 1/2 cup
  • Milk (dairy or non-dairy) - 1/2 cup

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed.
  4. Remove from heat and let it sit covered for 5 minutes. Fluff the quinoa with a fork.
  5. Stir in the cinnamon, maple syrup, vanilla extract, and salt until well combined.
  6. Divide the cinnamon quinoa into two bowls.
  7. Top each bowl with chopped almonds and fresh berries.
