Ingredients

  • All-purpose flour - 250 grams
  • Granulated sugar - 50 grams
  • Active dry yeast - 5 grams
  • Salt - 4 grams
  • Milk (dairy or non-dairy) - 120 ml
  • Unsalted butter (softened) - 50 grams
  • Large egg - 1
  • Cinnamon - 1 tablespoon
  • Brown sugar - 30 grams
  • Vanilla extract - 1 teaspoon

Steps

  1. In a small bowl, warm the milk until it's lukewarm and sprinkle the active dry yeast over it. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the yeast mixture, softened butter, and egg. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. In a separate bowl, mix together the brown sugar, cinnamon, and vanilla extract to create the filling.
  5. Once the dough has risen, punch it down and roll it out into a rectangle (about 30 x 40 cm). Spread the cinnamon filling evenly over the dough.
  6. Starting from one long side, roll the dough tightly to form a log. Pinch the edges to seal.
  7. Cut the log in half lengthwise to expose the filling, then twist the two halves together to form a braid. Place the twisted dough in a greased loaf pan.
  8. Cover the loaf pan with a damp cloth and let it rise for another 30 minutes.
  9. Preheat your oven to 180°C (350°F). Bake the babka for 25-30 minutes or until golden brown and cooked through.
  10. Let it cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy!
