- All-purpose flour - 125g
- Unsalted butter, cold and cubed - 60g
- Granulated sugar - 15g
- Salt - 1/4 tsp
- Ice water - 30ml
- Apples, peeled and thinly sliced - 2 medium (about 300g)
- Ground cinnamon - 1 tsp
- Brown sugar - 15g
- Lemon juice - 1 tsp
- Egg wash (1 egg beaten with 1 tsp water) - as needed
- Sliced almonds (optional) - for topping
Steps
- In a mixing bowl, combine the all-purpose flour, 15g of granulated sugar, and salt.
- Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form it into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 190°C (375°F).
- In another bowl, toss the sliced apples with 15g of brown sugar, ground cinnamon, and lemon juice. Set aside.
- Roll out the chilled dough on a floured surface into a circle about 25cm (10 inches) in diameter.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- Arrange the apple mixture in the center of the dough, leaving a 5cm (2-inch) border. Fold the edges of the dough over the apples, pleating as necessary.
- Brush the edges of the dough with the egg wash and sprinkle with sliced almonds if using.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the apples are tender.
- Allow to cool slightly before slicing and serving warm.
