Ingredients

  • All-purpose flour - 125g
  • Unsalted butter, cold and cubed - 60g
  • Granulated sugar - 15g
  • Salt - 1/4 tsp
  • Ice water - 30ml
  • Apples, peeled and thinly sliced - 2 medium (about 300g)
  • Ground cinnamon - 1 tsp
  • Brown sugar - 15g
  • Lemon juice - 1 tsp
  • Egg wash (1 egg beaten with 1 tsp water) - as needed
  • Sliced almonds (optional) - for topping

Steps

  1. In a mixing bowl, combine the all-purpose flour, 15g of granulated sugar, and salt.
  2. Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form it into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Preheat the oven to 190°C (375°F).
  5. In another bowl, toss the sliced apples with 15g of brown sugar, ground cinnamon, and lemon juice. Set aside.
  6. Roll out the chilled dough on a floured surface into a circle about 25cm (10 inches) in diameter.
  7. Transfer the rolled dough to a baking sheet lined with parchment paper.
  8. Arrange the apple mixture in the center of the dough, leaving a 5cm (2-inch) border. Fold the edges of the dough over the apples, pleating as necessary.
  9. Brush the edges of the dough with the egg wash and sprinkle with sliced almonds if using.
  10. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the apples are tender.
  11. Allow to cool slightly before slicing and serving warm.
