Ingredients

  • Eggs - 2 large
  • Greek yogurt - 1/2 cup

  • Olive oil - 1 tablespoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown rice under cold water and combine it with 2 cups of water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes or until the rice is tender and water is absorbed.
  2. While the rice cooks, bring a small pot of water to a gentle simmer. Carefully crack the eggs into the simmering water and poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove the eggs with a slotted spoon and set aside.
  3. In a small bowl, mix the Greek yogurt with minced garlic, salt, and black pepper to taste. Set aside.
  4. In a small skillet, heat the olive oil over medium heat. Add paprika and stir for about 30 seconds until fragrant.
  5. Once the rice is cooked, fluff it with a fork and divide it between two plates. Top each plate with a poached egg, a generous dollop of the seasoned yogurt, and drizzle the paprika oil over the top.
  6. Garnish with chopped parsley and serve immediately.
