Ingredients
- Brown rice - 1 cup
- Water - 2 cups
- Eggs - 2 large
- Plain Greek yogurt - 1/2 cup
- Garlic - 1 clove, minced
- Paprika - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the brown rice under cold water until the water runs clear, then combine it with 2 cups of water in a saucepan and bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 25 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, prepare the yogurt sauce by mixing the Greek yogurt, minced garlic, salt, and black pepper in a bowl. Set aside.
- In a small pan, heat the olive oil over medium heat and add paprika, stirring for about 30 seconds until fragrant. Remove from heat.
- Bring a pot of water to a gentle simmer and carefully crack the eggs into the water, poaching them for about 3-4 minutes until the whites are set but the yolks are still runny.
- Once the rice is done, fluff it with a fork and divide it into two bowls.
- Top each bowl of rice with a poached egg, drizzle with the paprika oil, and add a generous spoonful of the yogurt sauce.
- Garnish with chopped parsley before serving.
