Ingredients

  • Brown rice - 1 cup
  • Water - 2 cups
  • Eggs - 2 large
  • Plain Greek yogurt - 1/2 cup
  • Garlic - 1 clove, minced
  • Paprika - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then combine it with 2 cups of water in a saucepan and bring to a boil.
  2. Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 25 minutes or until the rice is tender and water is absorbed.
  3. While the rice is cooking, prepare the yogurt sauce by mixing the Greek yogurt, minced garlic, salt, and black pepper in a bowl. Set aside.
  4. In a small pan, heat the olive oil over medium heat and add paprika, stirring for about 30 seconds until fragrant. Remove from heat.
  5. Bring a pot of water to a gentle simmer and carefully crack the eggs into the water, poaching them for about 3-4 minutes until the whites are set but the yolks are still runny.
  6. Once the rice is done, fluff it with a fork and divide it into two bowls.
  7. Top each bowl of rice with a poached egg, drizzle with the paprika oil, and add a generous spoonful of the yogurt sauce.
  8. Garnish with chopped parsley before serving.
