Ingredients
- Jasmine rice - 1 cup
- Water - 2 cups
- Lime juice - 2 tablespoons
- Fresh cilantro - 1/4 cup, chopped
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Grilled chicken breast or chickpeas - 200 grams
- Cherry tomatoes - 1/2 cup, halved
- Avocado - 1 small, sliced
- Red onion - 1/4, thinly sliced
- Corn - 1/2 cup (canned or frozen)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and 2 cups of water. Add 1 teaspoon of salt and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water has evaporated.
- While the rice is cooking, prepare the protein: If using chicken, grill until cooked through and slice; if using chickpeas, rinse and drain.
- In a small bowl, mix the lime juice, chopped cilantro, minced garlic, olive oil, black pepper, and a pinch of salt to make the dressing.
- Once the rice is cooked, fluff it with a fork and mix in the cilantro-lime dressing.
- To assemble the bowls, divide the cilantro lime rice between two bowls. Top each bowl with grilled chicken or chickpeas, cherry tomatoes, avocado slices, red onion, and corn.
- Drizzle any remaining cilantro-lime dressing over the top and serve immediately.
