Ingredients

  • Jasmine rice - 1 cup
  • Water - 2 cups
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Grilled chicken breast or chickpeas - 200 grams
  • Cherry tomatoes - 1/2 cup, halved
  • Avocado - 1 small, sliced
  • Red onion - 1/4, thinly sliced
  • Corn - 1/2 cup (canned or frozen)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and 2 cups of water. Add 1 teaspoon of salt and bring to a boil.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water has evaporated.
  4. While the rice is cooking, prepare the protein: If using chicken, grill until cooked through and slice; if using chickpeas, rinse and drain.
  5. In a small bowl, mix the lime juice, chopped cilantro, minced garlic, olive oil, black pepper, and a pinch of salt to make the dressing.
  6. Once the rice is cooked, fluff it with a fork and mix in the cilantro-lime dressing.
  7. To assemble the bowls, divide the cilantro lime rice between two bowls. Top each bowl with grilled chicken or chickpeas, cherry tomatoes, avocado slices, red onion, and corn.
  8. Drizzle any remaining cilantro-lime dressing over the top and serve immediately.
