- Fresh cilantro - 1/4 cup, chopped (15g)
- Lime juice - 2 tablespoons (30ml)
- Lime zest - 1 teaspoon (5g)
- Olive oil - 1 tablespoon (15ml)
- Salt - 1/2 teaspoon (3g)
- Garlic powder - 1/2 teaspoon (2g)
Steps
- Rinse the white rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, 2 cups of water, and 1/2 teaspoon of salt. Bring it to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.
- While the rice is cooking, prepare the cilantro-lime mixture by whisking together the lime juice, lime zest, and olive oil in a small bowl.
- After the rice has finished cooking, remove it from heat and let it sit covered for an additional 5 minutes.
