Ingredients

  • White rice - 1 cup (200g)
  • Water - 2 cups (480ml)
  • Fresh cilantro - 1/4 cup, chopped (15g)
  • Lime juice - 2 tablespoons (30ml)
  • Lime zest - 1 teaspoon (5g)
  • Olive oil - 1 tablespoon (15ml)
  • Salt - 1/2 teaspoon (3g)
  • Garlic powder - 1/2 teaspoon (2g)

Steps

  1. Rinse the white rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, 2 cups of water, and 1/2 teaspoon of salt. Bring it to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.
  4. While the rice is cooking, prepare the cilantro-lime mixture by whisking together the lime juice, lime zest, and olive oil in a small bowl.
  5. After the rice has finished cooking, remove it from heat and let it sit covered for an additional 5 minutes.
  6. Fluff the rice with a fork and gently stir in the chopped cilantro and the cilantro-lime mixture until evenly combined.
  7. Taste and adjust seasoning with additional salt or lime juice if desired, then serve warm.
