- Water - 2 cups (480ml)
- Fresh cilantro - 1/2 cup, chopped (15g)
- Lime juice - 2 tablespoons (30ml)
- Olive oil - 1 tablespoon (15ml)
- Garlic - 1 clove, minced (3g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Cherry tomatoes - 1/2 cup, halved (75g)
- Avocado - 1/2 medium, diced (75g)
Steps
- Rinse the quinoa under cold water to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
- Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for 5 minutes.
- Fluff the quinoa with a fork and transfer it to a mixing bowl.
- Add chopped cilantro, lime juice, olive oil, minced garlic, salt, and black pepper to the quinoa. Stir until well combined.
- Gently fold in the halved cherry tomatoes and diced avocado.
- Serve immediately or chill in the refrigerator for 10 minutes before serving for a refreshing taste.
