Ingredients

  • Quinoa - 1 cup (170g)
  • Water - 2 cups (480ml)
  • Fresh cilantro - 1/2 cup, chopped (15g)
  • Lime juice - 2 tablespoons (30ml)
  • Olive oil - 1 tablespoon (15ml)
  • Garlic - 1 clove, minced (3g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Cherry tomatoes - 1/2 cup, halved (75g)
  • Avocado - 1/2 medium, diced (75g)

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.
  4. Remove the saucepan from heat and let it sit, covered, for 5 minutes.
  5. Fluff the quinoa with a fork and transfer it to a mixing bowl.
  6. Add chopped cilantro, lime juice, olive oil, minced garlic, salt, and black pepper to the quinoa. Stir until well combined.
  7. Gently fold in the halved cherry tomatoes and diced avocado.
  8. Serve immediately or chill in the refrigerator for 10 minutes before serving for a refreshing taste.
