Ingredients
- Chicken breast - 250 grams
- Olive oil - 2 tablespoons
- Fresh cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Garlic powder - 1 teaspoon
- Ground cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red bell pepper - 1/2, diced
- Cucumber - 1/2, diced
- Cherry tomatoes - 1 cup, halved
- Red onion - 1/4, finely chopped
- Avocado - 1/2, sliced
- Mixed greens - 2 cups
Steps
- In a small bowl, mix olive oil, lime juice, garlic powder, cumin, salt, and pepper to create a marinade.
- Place the chicken breast in a resealable bag or a bowl and pour the marinade over it. Seal and marinate in the refrigerator for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables: dice the red bell pepper, cucumber, and red onion, and halve the cherry tomatoes.
- Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side or until fully cooked and internal temperature reaches 75°C (165°F).
- Let the cooked chicken rest for a few minutes, then slice it into strips.
- In a large bowl, combine the mixed greens, diced vegetables, and chopped cilantro.
- Top the salad with sliced chicken and avocado. Drizzle with any remaining marinade if desired.
- Toss gently and serve immediately.
