  • Chicken breast - 250 grams
  • Olive oil - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red bell pepper - 1/2, diced
  • Cucumber - 1/2, diced
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/4, finely chopped
  • Avocado - 1/2, sliced
  • Mixed greens - 2 cups

Steps

  1. In a small bowl, mix olive oil, lime juice, garlic powder, cumin, salt, and pepper to create a marinade.
  2. Place the chicken breast in a resealable bag or a bowl and pour the marinade over it. Seal and marinate in the refrigerator for at least 15 minutes.
  3. While the chicken is marinating, prepare the vegetables: dice the red bell pepper, cucumber, and red onion, and halve the cherry tomatoes.
  4. Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side or until fully cooked and internal temperature reaches 75°C (165°F).
  5. Let the cooked chicken rest for a few minutes, then slice it into strips.
  6. In a large bowl, combine the mixed greens, diced vegetables, and chopped cilantro.
  7. Top the salad with sliced chicken and avocado. Drizzle with any remaining marinade if desired.
  8. Toss gently and serve immediately.
