- Brisket - 500 grams
- Apple cider - 250 ml
- Onion - 1 medium, sliced
- Garlic - 3 cloves, minced
- Carrots - 2 medium, chopped
- Celery - 1 stalk, chopped
- Olive oil - 2 tablespoons
- Dijon mustard - 1 tablespoon
- Brown sugar - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
- Water - 250 ml
Steps
- Preheat your oven to 160°C (320°F).
- In a large oven-safe pot, heat the olive oil over medium heat. Season the brisket with salt and pepper, then sear it in the pot for about 5 minutes on each side until browned.
- Remove the brisket from the pot and set aside. In the same pot, add sliced onions, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables start to soften.
- Stir in the Dijon mustard, brown sugar, thyme, and bay leaf. Cook for another 2 minutes until fragrant.
- Pour in the apple cider and water, scraping up any browned bits from the bottom of the pot.
- Return the brisket to the pot, ensuring it's submerged in the liquid. Cover the pot with a lid and transfer to the preheated oven.
- Braise the brisket for about 2 hours, or until it is tender and easily pulls apart with a fork.
- Once done, remove the pot from the oven and let the brisket rest for 10 minutes before slicing.
