Churros with Chocolate

Ingredients
- Gluten-free all-purpose flour - 100 grams
- Water - 120 milliliters
- Butter - 30 grams
- Granulated sugar - 20 grams
- Salt - 1/4 teaspoon
- Egg - 1 large
- Ground cinnamon - 1 teaspoon
- Vegetable oil - for frying
- Dark chocolate (70% cocoa) - 50 grams
- Heavy cream - 50 milliliters
Steps
- In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat, stirring until the butter is melted.
- Remove from heat and add the gluten-free flour, mixing vigorously until a dough forms. Let it cool for about 5 minutes.
- Add the egg to the dough and mix until fully incorporated and the dough is smooth.
- Heat vegetable oil in a deep skillet or pot over medium heat until it reaches 180°C (350°F).
- Transfer the dough to a piping bag fitted with a star tip. Carefully pipe 10 cm long strips of dough into the hot oil, cutting them with scissors.
- Fry the churros until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.
- In a small saucepan, heat the heavy cream until it is steaming, then remove from heat and add the dark chocolate. Stir until smooth and well combined.
- In a small bowl, mix granulated sugar with ground cinnamon. Roll the hot churros in the cinnamon sugar mixture.
- Serve the churros warm with the chocolate dipping sauce.
