Ingredients

  • water - 250 ml
  • unsalted butter - 50 g
  • granulated sugar - 1 tablespoon
  • salt - 1/4 teaspoon
  • gluten-free all-purpose flour - 125 g
  • large eggs - 2
  • cinnamon - 1 teaspoon
  • granulated sugar (for coating) - 1/4 cup
  • vegetable oil (for frying) - 500 ml
  • dark chocolate (for dipping) - 50 g

Steps

  1. In a medium saucepan, combine water, butter, granulated sugar, and salt. Bring to a boil over medium heat.
  2. Once boiling, remove from heat and stir in the gluten-free flour until a dough forms.
  3. Allow the dough to cool for about 5 minutes, then add the eggs one at a time, mixing well after each addition until smooth.
  4. Transfer the dough to a piping bag fitted with a star-shaped nozzle.
  5. In a deep pan, heat the vegetable oil over medium heat until it reaches 180°C (350°F).
  6. Pipe 10 cm long strips of dough into the hot oil, cutting them with scissors. Fry in batches until golden brown, about 2-3 minutes per side.
  7. Using a slotted spoon, remove the churros and drain on paper towels.
  8. In a shallow bowl, mix the granulated sugar and cinnamon together, then immediately toss the warm churros in the mixture until fully coated.
  9. Melt the dark chocolate in a microwave or double boiler for dipping, and serve alongside the churros.
