Ingredients

  • Long-grain white rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrots - 1 medium, diced
  • Potato - 1 medium, diced
  • Canned chickpeas - 1/2 cup, drained and rinsed
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a medium pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, diced carrots, and diced potato to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the canned chickpeas, paprika, cumin, salt, and black pepper. Cook for an additional 2 minutes to combine the flavors.
  4. Add the rice to the pot and stir to coat it with the vegetable mixture.
  5. Pour in the water and bring to a boil. Once boiling, reduce the heat to low and cover the pot.
  6. Let it simmer for about 20 minutes, or until the rice is tender and has absorbed the water.
  7. Remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork and stir in chopped parsley before serving.
