- Long-grain white rice - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrots - 1 medium, diced
- Potato - 1 medium, diced
- Canned chickpeas - 1/2 cup, drained and rinsed
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a medium pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic, diced carrots, and diced potato to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the canned chickpeas, paprika, cumin, salt, and black pepper. Cook for an additional 2 minutes to combine the flavors.
- Add the rice to the pot and stir to coat it with the vegetable mixture.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low and cover the pot.
- Let it simmer for about 20 minutes, or until the rice is tender and has absorbed the water.
- Remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork and stir in chopped parsley before serving.
