Ingredients
- Frozen French fries - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Celery - 1 stalk, diced
- Potato - 1 medium, peeled and diced
- Vegetable broth - 500 ml
- Milk - 100 ml
- Flour - 2 tablespoons
- Kosher salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried thyme - 1/2 teaspoon
- Canned clams - 200 grams, drained
- Cooked shrimp - 100 grams, chopped
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Preheat the oven and cook the frozen French fries according to package instructions until crispy.
- In a large saucepan, heat olive oil over medium heat. Add diced onion, minced garlic, and diced celery, sautéing until softened, about 5 minutes.
- Add the diced potato to the saucepan and cook for another 3 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 10 minutes, or until the potatoes are tender.
- In a small bowl, whisk together the milk and flour until smooth. Gradually add this mixture to the soup, stirring constantly to avoid lumps.
- Add the kosher salt, black pepper, dried thyme, canned clams, and chopped shrimp. Simmer for an additional 5 minutes, allowing the chowder to thicken.
- Once the fries are cooked, remove them from the oven and place them on serving plates. Spoon the seafood chowder generously over the fries.
- Garnish with fresh parsley before serving.
