Ingredients

  • Frozen French fries - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, diced
  • Potato - 1 medium, peeled and diced
  • Vegetable broth - 500 ml
  • Milk - 100 ml
  • Flour - 2 tablespoons
  • Kosher salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Canned clams - 200 grams, drained
  • Cooked shrimp - 100 grams, chopped
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Preheat the oven and cook the frozen French fries according to package instructions until crispy.
  2. In a large saucepan, heat olive oil over medium heat. Add diced onion, minced garlic, and diced celery, sautéing until softened, about 5 minutes.
  3. Add the diced potato to the saucepan and cook for another 3 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 10 minutes, or until the potatoes are tender.
  5. In a small bowl, whisk together the milk and flour until smooth. Gradually add this mixture to the soup, stirring constantly to avoid lumps.
  6. Add the kosher salt, black pepper, dried thyme, canned clams, and chopped shrimp. Simmer for an additional 5 minutes, allowing the chowder to thicken.
  7. Once the fries are cooked, remove them from the oven and place them on serving plates. Spoon the seafood chowder generously over the fries.
  8. Garnish with fresh parsley before serving.
