  • Vegetable broth - 500 ml
  • Coconut milk - 200 ml
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Chopped parsley - for garnish

Steps

  1. Rinse the clams under cold water to remove any sand or grit, then set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and celery, sautéing until soft and translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for about 10 minutes, or until the potatoes are tender.
