Ingredients

  • Chorizo sausage - 150 grams
  • Russet potatoes - 300 grams, diced
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Eggs - 2 large
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced potatoes to the skillet, season with salt and pepper, and cook for about 10 minutes, stirring occasionally, until they start to soften and become golden brown.
  3. Add the chopped onion and bell peppers to the skillet and cook for another 5 minutes until the vegetables are tender.
  4. While the vegetables are cooking, remove the casing from the chorizo and crumble it into the skillet.
  5. Stir in the minced garlic and cook for an additional 5-7 minutes, until the chorizo is browned and cooked through.
  6. In a separate non-stick skillet, heat the remaining olive oil over medium heat and crack the eggs into the pan. Fry them to your desired doneness.
  7. Once the hash is cooked, divide it between two plates, top each with a fried egg, and garnish with chopped parsley.
