- Eggs - 2 large
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the diced potatoes to the skillet, season with salt and pepper, and cook for about 10 minutes, stirring occasionally, until they start to soften and become golden brown.
